There are a few differences. Infeet SK has a HVF Nanoplus blank, while Infeet Ex has SVF Compile X Nanoplus. Infeet Ex has Megatop (on some models), and V-Joint Alpha. Infeet Sk has SK reel seats, while Infeet Ex has Zero Seat reel seats. Essentially Infeet Ex is the top of the tree, and SK is a little further down with its key difference being its skeleton reel which is design to maximise in-hand contact and feel.
